Ingredients for 6 servings:
- 1 puff pastry, rolled out round, with baking paper
- 200 g cheese, grated (Emmental)
- 3 tomatoes, aromatic (vine tomatoes)
- 1 bunch of parsley
- 1 garlic clove(s)
- 6 tomatoes, dried, pickled in oil, and 2 tbsp of the oil
- 4 eggs
- salt and pepper

Place the dough with the baking paper in a round quiche dish, sprinkle with a little cheese, cover evenly with tomato slices and pieces of sun-dried tomatoes, and season with salt and pepper. Whisk the eggs with 2/3 of the remaining cheese, season with salt and pepper, and pour over the tomatoes. Sprinkle with diced garlic and chopped parsley, then scatter the remaining cheese over the top. Drizzle with tomato oil and bake at 200°C for 45 minutes (do not preheat the oven). Alternatively, you can also use frozen puff pastry; you can use Gruyère instead of Emmental; thyme also tastes great with it.
