Avocado sorbet

Ingredients for 8 servings:

  • 175 g sugar
  • 3 avocados, ripe
  • 3 limes
  • 1 tsp vanilla extract or vanilla seeds from one pod
  • 3 tbsp brown rum

Working time approx. 20 minutes; Total time approx. 20 minutes

Exceptionally delicious sorbet as an intermediate course in an elaborate menu

Boil the sugar with a glass of water for 2 minutes until bubbling, then let cool. Juice the limes. Blend the avocado flesh with lime juice, a little grated lime zest, and the sugar syrup. Add the vanilla and rum. Transfer to an ice cream maker and process into a creamy sorbet. Alternatively, transfer to a shallow stainless steel bowl and freeze in the freezer, blending every hour. Serve in small scoops as an appetizer. Can be served on its own, but also tastes delicious with raspberry sauce.
