Ingredients for 1 servings:

  • 200 g cherry tomatoes, red, halved
  • 200 g cherry tomatoes, yellow, halved
  • 100 g shallot(s), finely diced
  • 25 g brown sugar
  • 125 ml balsamic vinegar
  • 80 g black olives, pitted, halved
  • salt and pepper
  • e.g. cayenne pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Melt the sugar over low heat and stir in the balsamic vinegar. Add the diced shallots and simmer for about 5 minutes. Stir in the cherry tomatoes and sauté for about 2 minutes. Add the olives, toss briefly, and season with salt, pepper, and cayenne pepper.
