Tomato salad on toasted ciabatta

Ingredients for 2 servings:

  • 4 vine tomatoes or Roma tomatoes
  • 1 cup mini mozzarella
  • ½ onion(s)
  • 1 tsp sugar
  • some salt and pepper
  • 3 tbsp olive oil
  • some balsamic vinegar
  • 1 handful of basil leaves, fresh
  • 4 slices of ciabatta

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and quarter the tomatoes. Remove the stems and seeds, and dice the rest. Slice or chop the onions into thin strips, depending on your taste. Halve the mini mozzarellas. Place everything in a bowl and season with sugar, salt, and pepper. Add the olive oil and balsamic vinegar and mix well. Toast the bread slices in a little olive oil in a pan. Place the bread on plates and divide the salad between them. I use the quantities according to taste, so everyone can vary it according to their taste.
