Ingredients for 4 servings:

  • 4 m.-sized tomatoes
  • 100 g paprika sausage (chorizo)
  • 2 garlic cloves
  • 2 stalk(s) spring onion(s)
  • 2 sprigs of parsley
  • 2 shots of vinegar (sherry vinegar)
  • olive oil
  • salt and pepper

Instructions

Wash the tomatoes and spring onions. Quarter the tomatoes and slice the spring onions into rings. Cut the chorizo ​​into finger-thick slices. Heat a pan with a little olive oil and fry the chorizo ​​slices until crispy. Add the sliced ​​garlic. Sauté everything and deglaze with salt, pepper, and sherry vinegar. While still warm, pour everything over the tomatoes and spring onions and season to taste. Finally, drizzle with a little more olive oil. Serve with bread.
