Ingredients for 4 servings:
- 4 m.-sized tomatoes
- 100 g paprika sausage (chorizo)
- 2 garlic cloves
- 2 stalk(s) spring onion(s)
- 2 sprigs of parsley
- 2 shots of vinegar (sherry vinegar)
- olive oil
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Wash the tomatoes and spring onions. Quarter the tomatoes and slice the spring onions into rings. Cut the chorizo into finger-thick slices. Heat a pan with a little olive oil and fry the chorizo slices until crispy. Add the sliced garlic. Sauté everything and deglaze with salt, pepper, and sherry vinegar. While still warm, pour everything over the tomatoes and spring onions and season to taste. Finally, drizzle with a little more olive oil. Serve with bread.
