Ingredients for 3 servings:
- 500 g cherry tomatoes
- 150 g feta cheese
- 3 spring onions
- 4 tbsp olive oil
- 3 tbsp balsamic vinegar, lighter
- 2 tsp Dijon mustard
- 1 tbsp honey, alternatively agave syrup
- some salt and pepper from the mill

A quick tomato salad, ideal for barbecues or as a fresh side dish
Wash and quarter the tomatoes. Dice the feta cheese or crumble it by hand. Finely slice the spring onions. Combine everything in a small bowl and set aside. Place all the dressing ingredients in a screw-top jar and shake vigorously or mix in a suitable container. Just before serving, pour the dressing over the salad and mix briefly. Ciabatta, onion or garlic baguette, rye bread, or a plain baguette go perfectly with this. As a main course with bread/baguette: serves 2 people. As a side dish, serves 3 to 4 people.
