Tomato salad with sunflower seeds

Ingredients for 4 servings:

  • 8 tomatoes
  • 4 shallots or 2 onions
  • 4 cloves garlic
  • 3 tbsp sunflower seeds or ground seeds of your choice
  • Salt and pepper, from the mill
  • 3 tbsp olive oil
  • Vinegar, as needed

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

or mixed kernels of your choice

Peel the tomatoes, cut them open, and remove the seeds. Then chop them into small pieces and finely dice the onion and garlic. Toss everything in a bowl with good olive oil, salt, and pepper, and let it sit for at least two hours. Vinegar is not required, but can be added if desired. Just before serving, add the sunflower seeds and mix well.
