Ingredients for 2 servings:

  • 1 small onion(s)
  • 1 garlic clove(s)
  • 2 tbsp tomato paste
  • some wine (Marsala, sweet)
  • 2 small tomatoes or 1 large one
  • 1 tbsp herbs, e.g. herbs de Provence
  • 1 tbsp sour cream or sour cream
  • 200 ml water
  • Oil for frying
  • salt and pepper
  • some sugar
  • possibly apple juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely dice the peeled onion and garlic clove, fry in oil until golden brown, and deglaze with the wine. Simmer for one minute and add the tomato paste. Simmer for another minute and add the water, diced tomatoes, and herbs. Simmer in an uncovered pan for 10 minutes until the sauce has thickened. Season with salt, pepper, and sugar, and simmer for another 5 minutes. Finally, stir in the sour cream. Note: If serving the sauce to children, use apple juice to deglaze the pan instead of the wine. For a reduced-fat version, omit the sour cream.
