Ingredients for 6 servings:
- 1 small onion(s)
- 2 garlic cloves
- 2 tbsp olive oil
- 1 can of tomatoes, chopped
- 1 tbsp tomato paste
- 1 jar red wine (0.1 l)
- 1 sprig(s) rosemary
- 1 small chili pepper(s)
- 1 tsp oregano, dried
- salt and pepper
- Water as needed

as a pizza topping or with pasta (keeps frozen or sterilized)
Peel and finely dice the onion and garlic, and sauté in hot oil in a shallow, wide saucepan or deep frying pan, but do not allow them to brown. Add the tomatoes and their juices, stir in the tomato paste, and top up with red wine. Add the rosemary, chili pepper, and oregano. Season with salt and pepper. Simmer uncovered on the lowest heat for at least 30 minutes, alternating between adding splashes of red wine and water. The sauce should be very thick, almost like a soft, spreadable paste, and have a rich, aromatic aroma. Served with pasta, it can also be used as a pizza topping.
