Tomato sauce à la Jessy

Ingredients for 2 servings:

  • 250 g meat sausage (poultry)
  • Oil or butter for frying
  • 1 can of tomatoes, chopped
  • 1 package of tomatoes, pureed
  • ½ tube(s) tomato paste
  • 1 m.-sized onion(s)
  • 1 clove(s) garlic
  • 2 gherkins
  • Sugar, 2-3 tbsp
  • salt and pepper
  • Paprika powder
  • possibly basil
  • possibly oregano
  • 250 g pasta

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cook the pasta as usual. Cut the sausage into small cubes and fry in a little oil or butter until browned. In the meantime, dice the onions, garlic, and pickled cucumbers. Add the onions and garlic to the sausage and sprinkle with 2-3 tablespoons of sugar. Caramelize the onions until translucent. Add the pickled cucumber and fry briefly. Then add the tomato paste, mix everything well, add the diced tomatoes, and deglaze with the tomato puree. Add a little more water, if desired. Season with salt, pepper, and paprika, and add the fresh herbs at the end. Bring everything to a boil, and the pasta sauce is ready. We never have a drop left over. This sauce has kept my loved one close to me forever.
