Tomato sauce marinara with pasta

Ingredients for 2 servings:

  • 1 m.-large shallot(s)
  • 1 clove(s) garlic
  • 2 tbsp olive oil
  • 1 pinch(s) of sugar
  • 1 can of tomatoes (San Marzano)
  • 200g pasta
  • Salt
  • 50 ml cream
  • 5 basil leaves
  • Parmesan or Grana Padano

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Finely chop the shallot and garlic and fry in olive oil until translucent. Add a pinch of sugar and let it caramelize slightly. Then add the tomatoes and simmer. If necessary, smash the tomatoes a little with a wooden spoon to reduce their size. In the meantime, cook the pasta in plenty of salted water. Use a ladle to skim off some of the pasta water and add it to the tomatoes. Now add the cream and continue to simmer until the sauce reaches the desired consistency. Finally, add finely chopped basil leaves and let simmer for a little longer. Season with salt and pepper. Serve the sauce with the pasta on plates and sprinkle with Parmesan or Grano Padano.
