  • 6 tbsp olive oil
  • 1 onion(s)
  • 400 g beef or pork, with bones (e.g. chops, neck, shoulder or neck)
  • 2 packs of tomatoes, strained, or a bottle of tomato sauce
  • 150 ml white or red wine, according to taste and type of meat
  • Basil, fresh or frozen
  • salt and pepper
  • 1 tbsp tomato paste
  • 100 g Parmesan, freshly grated
  • Water
  • possibly garlic, fresh

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the olive oil in a pan and brown the meat. Remove the meat and sauté the sliced onions, then add the meat back in. Pour in the wine and reduce briefly (about 2 minutes). Add the tomatoes and tomato paste. Simmer gently for about 60 minutes, bubbling gently, and add the basil shortly before the end of the cooking time. If the tomatoes reduce too much, add a little water. Of course, you can also add fresh garlic, depending on your taste. This ragout puts any tomato sauce with minced meat to shame. Ideal with pasta or gnocchi.
