Tomato sauce without tomatoes

Ingredients for 4 servings:

  • 1 large carrot(s)
  • 2 bell peppers, red
  • 3 garlic cloves
  • ½ onion(s)
  • ½ apple
  • 4 tbsp olive oil
  • some sugar
  • some salt
  • ½ tsp sweet paprika powder
  • n. e.g. herbs, e.g. B. Herbs of Provence
  • some vinegar, lighter
  • possibly ketchup (pumpkin ketchup)
  • n. B. water

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

low in histamine and vegan

Peel and chop the vegetables and apple, and roast them in olive oil until softened. Season with salt and let it caramelize slightly. Puree everything finely. Season with paprika, salt, sugar, and vinegar to taste for a tomato flavor. If you have pumpkin ketchup on hand, you can use that instead. Finally, add herbs to taste and dilute with water or oil to achieve the desired consistency.
