Tomato schnitzel pan

Ingredients for 3 servings:

  • 200 g pasta, e.g. penne
  • 400 g turkey schnitzel
  • 1 kg vine tomatoes
  • 2 garlic cloves
  • 2 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cook the pasta according to the package instructions. Thinly flatten the turkey cutlets and cut each into 4 pieces. Season with salt and pepper. Peel and finely dice the garlic. Fry the meat in hot olive oil, add the garlic, and sauté briefly. Drain the pasta. Wash and dice the tomatoes. Add the pasta and tomatoes to the cutlets, toss briefly, and season with salt and pepper. I save some of the pasta water and mix it into the schnitzel pan so it’s not so dry.
