Ingredients for 4 servings:
- 150 g tomatoes, dried
- 1,000 ml tomato(s), pureed
- 1 large can of tomatoes, peeled
- 1 packet of crème fraîche (crème légère)
- herbs, Italian
- 1 cup broth
- Salt
- pepper
- 2 tbsp tomato paste
- 1 onion(s)
- 1 garlic clove(s)
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
Dice the onion and sauté in olive oil in a pan. Crush the garlic clove and add it. Stir in the tomato paste and sauté. Deglaze with the peeled and pureed tomatoes. Add the sun-dried tomatoes and the broth and simmer for 20 minutes. Purée the soup and add the crème légère. Season to taste with salt, pepper, and Italian herbs and serve.
