Tomato Vegetable Happiness

The perfect tomato vegetable happiness recipe with a picture and simple step-by-step instructions.

  • 1 piece Onion, about 60 gr.
  • 1 smaller Fennel
  • Olive oil
  • 600 ml Vegetable broth
  • 2 tbsp Tomato paste
  • 1 piece Red pepper
  • 3 piece Tasty tomatoes
  • 2 Stalk Spring onion
  • Salt
  • Black pepper from the mill
  • 1 Handful Pasta for soups
  • Grana Padano Parmesan
  1. Remove the stalks from the tomatoes and cut the fruit into small pieces. Cut the spring onions into thin slices, set aside for the garnish. Remove the seeds and the partitions from the bell pepper and dice it into small pieces. Peel and finely dice the onion. Cut the fennel into thin strips. Heat the vegetable stock.
  2. Heat the olive oil and let the onions sear a little, then add the fennel and let sear a little. Deglaze with the vegetable stock, add a little tomato paste and simmer gently on a low heat. After about 10 minutes add the tomatoes and pasta and let simmer, after 5 minutes add the peppers and spring onions and simmer until the pasta is “al dente”
  3. In the meantime, grate the cheese finely.
  4. Season the soup again with salt & pepper to taste.
  5. Put the hot soup in a soup cup and garnish with some fresh Parmesan and the spring onion and now ….. enjoy your meal …..
