Tomatoes with crumb topping

Ingredients for 4 servings:

  • 8 tomatoes
  • 1 bunch arugula
  • 3 cloves garlic
  • 50 g breadcrumbs
  • 50 g Parmesan cheese (freshly grated)
  • 6 tbsp olive oil
  • Salt
  • Pepper, from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the tomatoes and remove the stems. Then halve them crosswise and place them cut-side up on a baking sheet or in a casserole dish. Wash and sort the arugula, shake dry, and finely chop. Peel the garlic and finely chop. Preheat the oven to 200 degrees Celsius. Meanwhile, mix the garlic, arugula, Parmesan cheese, breadcrumbs, and olive oil into a mixture. Season the tomatoes with salt and pepper and then cover with the crumb mixture. Bake the finished tomatoes in the oven at 180 degrees Celsius for about 25-30 minutes, until the tops are nicely browned.
