Tomatoes with feta cheese from the oven

Ingredients for 2 servings:

  • 8 tomatoes
  • 200 g sheep’s cheese
  • 8 peppers, green, mildly pickled
  • 100 ml extra virgin olive oil
  • 1 tsp, heaped thyme, dried
  • 1 tsp, heaped oregano, dried
  • Salt
  • Black pepper, freshly ground
  • 1 clove(s) garlic, squeezed

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Preheat oven to 200 degrees Celsius (400 degrees Fahrenheit). Mix the olive oil with the thyme, oregano, and garlic to make a marinade. Wash and slice the tomatoes, and arrange them in a baking dish. Roughly crumble the feta cheese on top. Season with salt and pepper. Place the peppers on top. Spread the marinade evenly over the tomatoes with a tablespoon. Place in the oven on the middle rack for about 15 minutes. Serve with a baguette or similar.
