Tonka bean parfait

Ingredients for 10 servings:

  • 10 eggs
  • 2 tonka beans
  • 250 g sugar
  • 400 ml whipped cream
  • 200 ml milk
  • 1 pinch of salt
  • Fruits of your choice

Separate the egg yolks and egg whites. Beat the egg yolks with sugar over a warm water bath until frothy, not too hot, or the egg will curdle. Now beat the egg yolk and sugar mixture in iced water until cold. It must be cold, otherwise the whipped cream will collapse and the parfait will lose its airiness. Heat the milk and grate the tonka beans into the milk (using a very fine grater). Let the milk cool slightly and add to the egg foam. Whip the heavy cream and carefully fold in. Whip the egg whites with a pinch of salt and fold in as well. The whipped egg whites make the parfait even lighter and creamier. The pinch of salt helps the egg whites stand up better. Pour into molds of your choice and store in the freezer. Serve with a fruit garnish and fruit. A truly unique flavor for you and your guests.
