Tony's spicy chicken drumsticks in spicy sauce

Ingredients for 2 servings:

  • 2 chicken legs
  • 2 carrots
  • 2 potatoes
  • 1 onion(s)
  • 1 tbsp Ajvar, hot
  • some salt and pepper
  • Garlic
  • Paprika powder
  • 100 ml red wine
  • 150 ml olive oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

Pour approximately 100 ml of olive oil into a baking dish. Then add a little salt, pepper, and paprika. Using a brush, mix the ingredients together to form a marinade. Brush the marinade evenly over the chicken thighs and marinate. Peel the potatoes and carrots, cut them into small pieces (approx. 1-2 cm cubes), and place them in the baking dish. Next, place the chicken thighs next to each other on top of the potato and carrot pieces. Now take a small bowl and prepare a second marinade. To do this, dice 1 onion, mix with 50 ml olive oil, approximately 100 ml red wine (chicken stock is also possible), a crushed garlic clove, a tablespoon of ajvar, a little salt, pepper, and paprika. Then spread it over the chicken thighs. Now place the whole thing in a preheated oven at 180 degrees Celsius (convection oven) for 60 minutes. Note: Temperatures above 180 degrees Celsius are not suitable for olive oil! The chicken drumsticks can be turned after about 40 minutes.
