Top-and-bottom Streusel Thalers

The perfect top-and-bottom streusel thalers recipe with a picture and simple step-by-step instructions.

Yeast dough

  • 400 ml Milk
  • 1 Pck Dry yeast
  • 1 Egg
  • 35 g Liquid butter
  • 125 g Sugar
  • Salt
  • 500 g Flour

Sprinkles

  • 200 g Flour
  • 100 g Sugar
  • 100 g Butter
  • Cherry jam
  1. Yeast dough: Put the flour on the work surface and make a small hollow, put sugar and dry yeast in the hollow and carefully pour in the warmed milk and “whisk” with your finger, gradually adding more and more flour, adding the remaining ingredients and knead everything vigorously for several minutes, the result is a smooth dough that does not stick (if it does, add a little more flour). Let the dough rise in a warm place until it has doubled, knead again and let rise. (approx. 1 to 1 1/2 hours). Then roll out the dough about 1 cm thick and cut out circles (7-8 cm diameter). Let the circles rise again for about 30 minutes.
  2. So, there are many !!! (25 pieces). Anything you don’t want to process directly is laid out next to each other in a freezer bag and then frozen. So you have something in the house for spontaneous appetite attacks.
  3. Preheat the oven to 180 °.
  4. Now knead the flour, sugar and butter for the crumble, until the crumble can be crumbled, knead a moment longer for the large crumble, then even more dough sticks together.
  5. Place parchment paper or silicone baking mat on a baking sheet. Measure how many circles of dough fit on the tray and crumble the crumble dough circles onto the tray, put a yeast dough circle on top of it, put a spoonful of jam on each yeast circle and then crumble the crumble dough over it. Crumble the rest of the crumble dough into the gaps as small heaps, these will be very tasty biscuit-like crunchy pieces.
  6. Put it in the oven! Push the tray up or seal off the bottom heat a little with a second tray. Bake until golden brown for about 30-35 minutes. Check the oven from time to time and monitor the browning! If the yeast dough browns too quickly, the tray must be pushed in higher.
  7. The yeast dough is a donut / pancake / donut recipe. Up to step 2 it is the same preparation, the circles are then baked in 160 ° hot oil for 3-4 minutes on each side and then filled with jam. I used 8 frozen parts for this, just let them thaw slightly and pull something into shape, and off I went …
