Ingredients for 2 servings:
- 400 g tortellini, fresh, filling to taste
- 250 g leaf spinach, frozen
- 1 tbsp oil
- some water
- 1 small onion(s)
- 1 garlic clove(s)
- 400 g tomato sauce, homemade or from a jar
- 1 ball of mozzarella
- Salt
- pepper
- Nutmeg, grated
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Finely chop the onion and garlic and fry briefly in a little oil. Add the frozen spinach with a little water and let it thaw. Sauté briefly and season with salt, pepper, and nutmeg. Spread the cooked spinach in a baking dish and top with the tortellini. Be sure to use fresh, chilled tortellini, which only need to cook for 2-3 minutes, otherwise they won’t cook through in the casserole. Pour the tomato sauce over the tortellini and spread it evenly to cover everything. You can either make your own tomato sauce beforehand or use a ready-made seasoned one from a jar. Finally, tear the mozzarella into small flakes and cover the casserole with them. Alternatively, simply use grated cheese of your choice. Bake at 200 degrees Celsius for about 20 minutes, until the cheese is lightly browned.
