Tortellini casserole with vegetables

Ingredients for 4 servings:

  • 500g tortellini
  • 1 onion(s)
  • 250 g mushrooms, sliced
  • 2 bell peppers, red, diced
  • 1 small zucchini, diced
  • 1 garlic clove(s)
  • 100 g whipped cream or coffee cream
  • 100 g sour cream
  • 1 tbsp tomato paste
  • salt and pepper
  • herbs, Italian
  • 200 g cheese, grated

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Cook the tortellini in salted water until al dente. Finely chop the onion and sauté briefly in a pan with a little oil. Add the mushrooms, bell peppers, zucchini, and crushed garlic and sauté. Deglaze with the sweet cream. Then add the sour cream and tomato paste and season with the herbs and spices. Combine the tortellini and vegetable mixture, transfer to a greased baking dish, and sprinkle with cheese. Bake at 200°C (top/bottom heat) for about 30 minutes. Tip: If you like, you can also add some ham.
