Tortellini in ham, mushroom and melted cheese sauce

Ingredients for 3 servings:

  • 800 g tortellini
  • 200 g cooked ham
  • 1 m.-sized onion(s)
  • 1 garlic clove(s)
  • 400 g mushrooms
  • 200 g herb cream cheese
  • salt and pepper
  • nutmeg
  • Water

First, wash, clean, and slice the mushrooms. I like to use large mushrooms, which are suitable for grilling, as they require less cleaning. Peel the onion and garlic and dice them. Also cut the ham into small pieces. Heat oil in a large pot and fry the diced onion until translucent, then add the cooked ham. Now add the garlic and mushrooms. The mushrooms can be added in batches. As a quick tip, sprinkle a little salt on the mushrooms to help them lose their moisture. Once the mushrooms have collapsed and are well seared, deglaze everything with water, add the tortellini, and top up with water. Now add the cream cheese to the sauce, let it melt, stir well, and season with salt, pepper, and nutmeg. Then let everything simmer for a while with the lid on, until the tortellini are soft. Tip: You can also replace some of the mushrooms with peas or add more.
