Zucchini pasta salad

Ingredients for 2 servings:

  • 250 g pasta (for visual effect, you can also use colorful ones)
  • 1 zucchini
  • 1 onion(s), diced
  • 1 garlic clove(s)
  • 125 g feta cheese
  • 2 tbsp balsamic vinegar, white
  • 4 tbsp olive oil
  • 1 tsp mustard (Dijon)
  • e.g. parsley, chopped
  • pepper
  • Salt
  • little water

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the pasta in plenty of salted water according to the package instructions until al dente. Drain well through a sieve. Wash the zucchini, halve it, and cut it into thin strips. Fry it in a little oil with the diced onion. Then sauté it for about 5-10 minutes with a little water. Make a salad dressing from the balsamic vinegar, olive oil, and mustard. Peel the garlic clove and press it in (amount of garlic according to taste; we prefer a bit more). Add the zucchini and onion to the pasta and toss with the salad dressing. Dice the feta cheese and stir it into the salad. Season with salt and pepper and garnish with fresh parsley. The salad can be eaten warm immediately or cold after about two hours.
