Tortellini or gnocchi with baked tomatoes

Ingredients for 4 servings:

  • 800 g tortellini with cheese filling or gnocchi (from the refrigerated section)
  • 500 g tomato(s) (cocktail tomatoes)
  • 50 g pine nuts
  • 50 g Parmesan
  • 2 tbsp breadcrumbs
  • 8 tbsp olive oil
  • Fresh basil (10-20 leaves), alternatively pesto

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Halve the cherry tomatoes and arrange them on a baking sheet. Roughly chop the pine nuts and mix them with the Parmesan and breadcrumbs. Spread this mixture over the tomatoes. Drizzle the oil over the tomatoes. Bake the tomatoes in a preheated oven at 220°C for 10 minutes. Meanwhile, cook the gnocchi or tortellini. Finally, toss the gnocchi/tortellini with the tomatoes and serve. Garnish with a sprinkle of Parmesan cheese.
