Tortellini salad

Ingredients for 4 servings:

  • 3 packs of tortellini, fresh, from the refrigerated counter
  • 200 g feta cheese
  • 4 tomatoes
  • 1 bunch arugula
  • 1 small onion(s)
  • 1 garlic clove(s)
  • 2 tsp red pesto
  • 10 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Thyme, dried
  • Oregano, dried
  • salt and pepper

Working time approx. 25 minutes; Total time approx. 25 minutes

great Italian-style party salad with feta cheese

Cook the tortellini until al dente. They shouldn’t be too soft, so they don’t fall apart later in the salad. Dice the tomatoes and feta cheese. Trim and wash the arugula. Finely chop the onion and garlic. Make a sauce with olive oil, balsamic vinegar, pesto rosso, onion, garlic, and spices. Add the diced tomatoes and let it sit for a moment so the sauce thickens slightly due to the water released from the tomatoes. Then add the feta, arugula, and the still-lukewarm tortellini and mix everything together. The salad tastes best when left to stand overnight.
