Tortellini salad with fresh vegetables

Ingredients for 8 servings:

  • 250 g tortellini, dried with meat filling
  • 1 cucumber(s)
  • 400 g tomatoes
  • 1 can of corn
  • 1 bell pepper(s)
  • 150 g Emmental cheese, in one piece
  • 200 g cooked ham
  • some stalks of fresh basil
  • 100 g mayonnaise
  • salt and pepper
  • Herbs (salad herbs, oregano)
  • 3 tbsp vinegar
  • 3 tbsp olive oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

The vegetables make the salad very fresh and tasty

Cook the tortellini in salted water according to the package instructions. Drain, and let cool. Dice the cucumber, tomatoes, and bell peppers. Cut the Emmental cheese and ham into small cubes. Finely chop the basil. Drain the corn. Place everything in a bowl, add the tortellini and corn. Add the vinegar, oil, and mayonnaise, and mix well. Season with salt, pepper, salad greens, and a little oregano, and mix everything together. Season to taste and serve with baguette. It’s also delicious as a side dish at a barbecue.
