Ingredients for 4 servings:
- 250 g tortellini, from the refrigerated section
- 1 pepper, fresh, finely diced
- 50 g sugar snap peas
- 150 ml sour cream
- 5 tbsp cheese, grated Grana Padano
- 3 tbsp herbs, chopped
- e.g. salt and pepper
Instructions
Working time approx. 10 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes
Cook the tortellini according to the package instructions, drain, and let cool. Wash and trim the snow peas, then blanch them in salted water until al dente. Then refresh them with ice water to retain their color. Make a dressing with the remaining ingredients. Pour this over the tortellini and snow peas and mix well. Let it marinate. This salad goes well with grilled bread and baguette.
