Ingredients for 3 servings:
- 1 pack of tortellini, e.g. with cheese or mushroom filling
- ¼ iceberg lettuce
- 1 red bell pepper(s)
- 4 mushrooms
- ½ can corn
- 2 tomatoes
- ½ onion(s)
- n. B. Cheese, e.g. Gouda
- n. B. Vegetables, varieties of your choice
- 1 cup sour cream
- salt and pepper
- Herbs, e.g. parsley
- 1 dashes lemon juice
- 1 pinch(s) of sugar
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes
Cook the tortellini according to the package instructions and then let cool. Meanwhile, chop the iceberg lettuce, dice the bell peppers, slice the mushrooms, dice the tomatoes, chop the onions, and dice the Gouda cheese. Place everything in a bowl and mix well. For the sauce, season the sour cream with salt, pepper, herbs, a squeeze of lemon juice, and a pinch of sugar. Then add the sauce to the salad and stir well. Tip: The salad is also delicious with warm tortellini.
