Tortellini with fruity tomato sauce and arugula

Ingredients for 3 servings:

  • 2 packs of tortellini with any filling
  • 4 beefsteak tomatoes
  • 1 vegetable onion(s)
  • 2 cloves garlic
  • Herbs, dried or fresh, e.g. oregano, basil, rosemary
  • Salt and pepper from the mill
  • 3 tbsp olive oil
  • 1 pack of arugula
  • Grated Grana Padano
  • 1 handful of tomatoes, small

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Quick, easy and super delicious

Pour hot water over the beefsteak tomatoes so that the skin can be easily peeled off. Then dice the peeled tomatoes and the onion finely. Heat the olive oil in a pan and add the onion until translucent. Crush the garlic and add it to the onions, sweat briefly and then add the tomatoes. Season the tomato sauce with salt, pepper and the herbs and let it simmer. Now bring water to a boil in a pan and add salt. Let the tortellini simmer for 2 minutes. Quarter the handful of small tomatoes. Drain the tortellini and arrange on a plate. Pour the tomato sauce on top and garnish with a handful of arugula and a few tomato quarters. Finally, sprinkle with the grated Grana Padano.
