Ingredients
 

  • 250 g Penne
  • 250 g Cherry tomatoes
  • 100 g Shallots
  • 2 tbsp Pink pepper
  • 150 g Smoked salmon
  • 20 g Butter
  • 50 ml Vodka
  • 200 ml Cream
  • 100 g Mascarpone
  • 1 bunch Chives

Instructions
 

  • Quarter and core the tomatoes. Finely dice shallots. Coarsely crush the pink pepper berries in a mortar. Cut salmon into thin slices.
  • Melt the butter in a saucepan and fry the shallots in it until translucent. Deglaze with vodka and let it boil down. Pour in the cream and reduce to a creamy consistency over a mild heat for 2-3 minutes, seasoning with salt and pepper.
  • Cook the penne in plenty of boiling salted water according to the instructions on the package, then drain in a colander, collecting 100 ml of pasta water. Mix the penne and pasta water in a saucepan with the cream sauce. Add the tomatoes and mascarpone and stir, if necessary lightly salt and season with pink pepper berries. Put the pasta on a plate and serve with the salmon. Sprinkle with chives.
  • Tip 4: Those who prefer to be more calorie-conscious can use cream cheese instead of mascarpone. When using fresh salmon ...... cut the salmon into small pieces and add to the sauce with the noodles and let it steep.
