Ingredients for 4 servings:
- 1 ½ liters of water
- 1 tbsp lard, (goose fat, alternatively pork fat)
- 15 garlic cloves, chopped or crushed
- 2 eggs
- salt and pepper
- 1 tbsp white vinegar
- 1 baguette(s)
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
a winter soup from southern France
Bring the water to a boil. Melt the lard in a pan and sauté the garlic without browning. Add the garlic to the water. Season with salt and pepper, and simmer for 15 minutes. Then remove from the heat. Separate the eggs: Add the egg whites to the soup and stir. Mix the egg yolks with the vinegar. Slice the baguette, place a few slices on each plate, and spread the egg yolk mixture over the slices. Spoon the soup over the mixture and serve immediately.
