Traditional French orange cream

Ingredients for 4 servings:

  • 300 ml orange juice, freshly squeezed
  • ½ orange(s) or lemon(s), untreated, grated peel
  • 2 egg yolks
  • 30 g cornstarch
  • 100 g sugar
  • 125 ml cream
  • 30 g dark chocolate

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Crème d’orange

Whisk together the orange juice and zest, egg yolks, cornstarch, and sugar. Bring the liquid to a boil in a small saucepan while stirring. Remove from the heat and let it cool in a water bath. Whip the cream until stiff peaks form, then combine with the orange cream. Coarsely grate the chocolate. Serve the orange cream in portions in glasses and garnish with chocolate shavings. Tip: Refine with Grand Marnier.
