Ingredients for 6 servings:

  • 1 kg pork neck (collar)
  • 1 kg salt
  • salt and pepper
  • rosemary

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 15 minutes

Spread 1 kg of salt on a baking sheet and place the meat on it. Season the top of the meat with salt, pepper, and rosemary. Then roast in the oven for 1 hour at 250 degrees Celsius and another hour at 200 degrees Celsius. You don’t have to worry about the roast, and it still gets a wonderful crust. We serve it with rosemary potatoes, potato salad, or simply bread.
