Chocolate mousse à la Bocuse

Ingredients for 4 servings:

  • 125 g butter
  • 200 g chocolate coating
  • 6 eggs, separated into yolks and whites
  • 150 g sugar
  • 1 cup of coffee, strong, mocha

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 20 minutes

Melt the butter in a saucepan and stir in the crumbled chocolate. Beat the egg yolks and sugar until fluffy, then carefully fold the egg yolks into the butter and chocolate mixture and stir in the mocha. Beat the egg whites until stiff peaks form. First fold a ladleful into the chocolate mixture, then fold the mixture into the remaining beaten egg whites. Ladle the mousse into bowls and refrigerate overnight.
