Ingredients for 12 servings:
- 250 g flour, 150 g trail mix
- 3 tsp baking powder
- 1 tsp. baking soda
- 2 eggs
- 125 g sugar
- 150 g natural yogurt
- 75 ml vegetable oil
- 100 ml milk
- 150 g icing sugar (for the icing)
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Preheat the oven to 180 degrees Celsius and grease a muffin tin (or use baking cups). Roughly chop 140g of trail mix. Mix the flour with the baking powder and baking soda. Whisk the eggs, then gently stir in the sugar, yogurt, oil, and milk. Add the flour mixture and stir until the dry ingredients are moistened. Fold in the trail mix. Pour the batter into the tin. Bake on the middle rack for 20-25 minutes. Remove from the oven and let rest in the tin for another 5 minutes. Make a glaze from powdered sugar and water and decorate the cooled muffins with the glaze and the remaining trail mix.
