Ingredients for 2 servings:
- 2 red bell peppers, diced
- 1 piece(s) bell pepper(s), green, diced
- 1 bunch of spring onions, cut into rings, white and green parts separated
- 3 garlic cloves
- 3 tomatoes, diced
- 1 sprig(s) rosemary
- 2 sprigs of thyme
- olive oil
- 1 can beans, white thick
- salt and pepper
- Sugar
- basil

Heat olive oil in a pan, fry the diced bell peppers, the white part of the spring onions, and the garlic until well browned. Add the herb sprigs and fry for a bit longer. Add the diced tomatoes, reduce the heat, and season with salt, pepper, and sugar. Finally, add the white beans and the onion greens and let them simmer briefly. Before serving, remove the herb sprigs and serve the vegetable pan sprinkled with fresh basil. Serve with ciabatta and perhaps grilled fish.
