Trio of goat cheese, honey apple and pomegranate on a bed of arugula

Ingredients for 4 servings:

  • 125 g arugula
  • 150 g Camembert(s) made from goat cheese
  • 3 small apples
  • 1 pomegranate
  • 2 tbsp honey
  • 3 tbsp balsamic vinegar, dark
  • 1 tbsp olive oil
  • Pepper, coarse, black, from the mill
  • Salt

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Thinly slice the apples with a sharp knife and core them. Arrange them on baking paper and dry in the oven at 90-100 degrees Celsius for about 30 minutes. Wash the arugula and spread it on a large, flat serving plate. Arrange the apple slices. For the dressing, combine honey, balsamic vinegar, salt (if desired), and olive oil. Drizzle over the salad. Place a piece of goat cheese and Camembert on each apple ring. Remove the pomegranate seeds and scatter them over the salad. Freshly grind the pepper over the top and serve.
