Ingredients for 4 servings:

  • 250 g cheese (e.g. Gouda)
  • 1 bunch of radishes
  • 1 apple
  • 2 gherkins
  • some olive oil
  • some mustard, medium hot
  • White balsamic vinegar
  • some apple juice
  • Sugar
  • salt and pepper
  • pumpkin seeds

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with radishes and apple

Finely chop the cheese, radishes, apple, and gherkins. Place them in a bowl. Make a creamy dressing with a little apple juice, olive oil, mustard, and balsamic vinegar. Season to taste with sugar, salt, and pepper. Pour over the salad and toss to combine. Sprinkle with pumpkin seeds to finish.
