Ingredients for 2 servings:
- 100 g wheat flour type 405
- 10 g tapioca flour
- 1 tsp, ground chili powder (chipotle chili)
- 1 pinch of nutmeg, freshly grated
- 2 g instant chicken broth
- 60 g coconut milk, creamy
- 1 tbsp orange juice
- 1 pinch of white sugar
- 1 tbsp palm oil, premium quality
- n. B. Flour for the work surface
- 1 tbsp palm oil, premium quality, for baking
- 2 m.-sized garlic cloves, fresh
- 50 g crème fraîche
- 80 g coconut milk, creamy
- 2 tbsp sauce (sweet and sour sauce, Thai style No. 3 – see my recipes)
- 2 g instant chicken broth
- 2 tbsp palm oil, premium quality
- 60 g smoked ham, diced
- 60 g Emmental cheese, grated
- 2 small onions, red
- 1 small spring onion(s), fresh
- 1 Pepper, long, red
- n. B. Celery leaves, fresh, optional
- n. B. flowers and leaves

A delicious pan-fried snack that requires little effort. Recipe from Lombok, Indonesia. Original title: Roti dengan keju dan sayuran.
Mix all the dry ingredients for the dough in a mixing bowl. Add the creamy coconut milk and knead until a crumbly dough forms. Add the oil and knead until the flour binds. Wrap in plastic wrap and refrigerate for 1 hour. Meanwhile, press the garlic into a bowl, add the crème fraîche, coconut milk, sweet and sour sauce, Thai Style No. 3, instant chicken broth, and palm oil. Mix everything well to form a sauce and set aside. Slice the onions and peppers into thin rings. Remove the seeds from the pepperoni rings. Divide the dough into 2 equal parts. Shape each part into a ball, dust with flour, and roll out into a 28 cm diameter flatbread. Grease a 28 cm pan with a little oil. Place one flatbread in the pan and bake with the lid on until it has set slightly. Spread half of the sauce on the flatbread and sprinkle the appropriate amount of the solid topping ingredients on top. Cover and bake over medium heat until the cheese is melted. Remove from the pan and serve hot and crispy. Repeat with the other flatbread.
