Tuna-Jack – the tuna alternative

Ingredients for 4 servings:

  • 2 can/n Jackfruit, à 225 g drained weight, or Smoked Jackfruit
  • 1 tsp olive oil
  • 1 onion(s)
  • 4 cloves garlic
  • 1 tsp tarragon
  • 2 tsp nori seaweed
  • 8 tbsp mayonnaise, also vegan
  • 4 tbsp gherkins
  • 4 tsp mustard
  • 1 lemon(s), juice
  • 2 pinches of salt
  • 2 pinches of pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Chop the onions, garlic, and gherkins. Drain the jackfruit well and tear it into small pieces (using two forks, a blender, or a food processor) until it has the consistency of tuna. Sauté the onions until golden brown. Add the jackfruit and garlic and sauté for about 10 minutes, until most of the liquid has evaporated. Crumble the seaweed into small pieces and add it. Meanwhile, mix the other ingredients in a bowl. Add the fried jackfruit, stir, season to taste, and you’re done. This tuna alternative tastes fantastic on baguette rolls, in a sandwich, or as a wrap.
