Ingredients for 4 servings:
- 4 tuna steaks
- 50 g black pepper
- 50 g pepper, white
- 100 g pepper (Szechuan)
- 100 g coriander seeds
- some sunflower oil
- e.g. sea salt (preferably fleur de sel)
Instructions
Working time approx. 5 minutes; Total time approx. 5 minutes
Combine the peppercorns and coriander, coarsely grind, and sieve out the fine powder. Rub the pepper on one side of the tuna. Sear briefly and quickly on both sides until the center remains nice and translucent. This dish is best served with Asian vegetables and glass noodles.
