Turkey and vegetable stir-fry

Ingredients for 5 servings:

  • 600 g turkey breast fillet(s), cut into strips
  • 250 g mushrooms, white or brown, larger mushrooms halved or quartered
  • 250 g red bell pepper(s), skinned, pitted, finely diced
  • 250 g green beans, cleaned and broken
  • 250 g shallot(s), cut into fine strips
  • 3 cloves garlic, finely diced
  • 100 g leek, finely chopped
  • 200 g carrot(s), finely diced
  • 300 ml vegetable broth without salt
  • 100 ml soy sauce, dark, naturally brewed
  • 1 tbsp paprika powder, sweet
  • 1 tsp, heaped white pepper, finely ground
  • n. B. Salt
  • Fat for frying
  • 2 tbsp, heaped wheat flour
  • 2 tbsp, heaped paprika powder, sweet
  • 1 tsp, leveled salt

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

quick and easy to prepare

Prepare the vegetables as listed in the ingredients list and set aside, covered. Place the flour, paprika, and salt in a bag and mix. Add the turkey strips and flour them evenly. Dust off any excess flour through a sieve. Brown the meat evenly in a hot, greased pan, then drain the fat on kitchen paper and set aside. Fry the prepared vegetables and mushrooms in the frying fat until lightly brown. Then deglaze with the stock and soy sauce. Add the meat, salt, pepper, and paprika and mix everything evenly with a wooden spoon. Simmer, covered, for about 15 minutes. Season to taste before serving. Serve with rice or noodles.
