Ingredients for 2 servings:

  • 400 g turkey breast fillet(s) or chicken breast fillet
  • 2 pointed peppers, red and green
  • ½ eggplant(s)
  • 1 small zucchini
  • 1 bunch of spring onions
  • 1 garlic clove(s), or more if desired
  • ½ jar vegetable stock, approx. 200 ml
  • 100 ml cream (15% fat)
  • 1 tbsp tomato paste
  • 1 shot of Metaxa
  • salt and pepper
  • Chicken seasoning
  • rosemary
  • oregano
  • olive oil

Mediterranean, food combining

Shred the poultry, season with salt, pepper, and chicken seasoning, and fry in olive oil until golden brown. Remove from the pan and fry the finely chopped bell peppers, zucchini, and eggplant. Then add the chopped garlic clove and the sliced ​​spring onions. Add a little vegetable stock (the eggplant will absorb any remaining oil) and simmer for a while. Add spices such as rosemary and oregano. Once the liquid has evaporated, stir in the tomato paste and fry briefly. Deglaze everything with a generous splash of Metaxa and bring to a simmer. Add the stock and cream, reduce slightly, add the meat back in, and bring back to a boil briefly. Season to taste. Serve with rice, baguette, or tagliatelle. It’s also wonderful as a food combining dish on its own!
