Turkey Breast – Hawai

Hawaiian Turkey Breast
- 4 Turkey breast fillet cuts
- Salt
- Pepper
- 1 tsp Curry
- 4 Discs Pineapple
- 100 ml Pineapple juice
- 250 ml Coconut milk
- 4 Discs Cooked ham
- 150 g Grated mountain cheese
- 4 tsp Cranberries
- 2 tbsp Rapeseed oil

- 150 ml Coconut milk
- 200 ml Poultry broth

- Bring the coconut milk and stock with the rice to a boil in a saucepan. Cover and cook over medium heat for 25 minutes.
Hawaiian Turkey Breast
- Drain the pineapple, catching the juice as you will need it later.
- Preheat the oven: top and bottom heat 200 ° C / circulating air 200 ° C
- Season the turkey breast pieces with salt, pepper and curry. Heat the oil in a pan and fry the turkey breast pieces for about 4 minutes on each side, remove and place in a greased casserole dish and top each with a slice of cooked ham
- Briefly fry the pineapple on both sides in the frying fat, remove and place on the turkey breast pieces covered with the cooked ham.
- Roast 1 teaspoons of curry in the frying fat, add pineapple juice and coconut milk and simmer for about 8 minutes. Pour the sauce around the meat into the baking dish. Sprinkle grated cheese generously over the pineapple and put a blob of cranberries in the middle.
- Bake in the preheated oven for 15 minutes.
- Arrange on plates with the rice.
