Ingredients for 4 servings:
- 500 g turkey breast, or meat of your choice
- 1 can coconut milk, creamy
- 4 spring onions
- 1 large onion(s)
- 200 g sugar snap peas
- 3 bell peppers
- some oil for frying
- some salt
- some pepper
- some curry powder
- some paprika powder
- some coriander, powder or fresh
- 1 pinch(s) of cayenne pepper
- possibly herbs, fresh
- possibly chili pepper(s)
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes
Clean the onion, bell pepper, snow peas, and spring onions and cut into pieces (about 1 cm wide). Cut the turkey breast into thin strips. Brown the meat in a pot with a little oil over high heat, then remove from the pot. Add a little more oil. Sauté the onions until hot, then add the bell peppers. Season with salt, pepper, curry powder, paprika, coriander, and cayenne pepper and fry until the peppers begin to brown (about 3 minutes). Now fry the snow peas and spring onions for another 2-3 minutes, then return the meat to the pot and top up with coconut milk. Let the whole thing simmer for about 5 minutes until the snow peas begin to soften. Rice goes best with this dish. Tips: Instead of turkey breast, you can of course also use chicken breast, pork, or beef. If you like, you can add fresh herbs and/or finely chopped chili along with the coconut milk.
