Turkey Curry with Mango

Ingredients
 

  • 500 g Turkey schnitzel
  • 165 ml Unsweetened coconut milk
  • 250 g Mango preserve drained
  • 1 tsp Red Thai curry paste
  • 2 tbsp Mango chutney
  • 1 tbsp Curry powder
  • Salt

Instructions
 

  • Cut turkey fillets into bite-sized pieces. Divide the mango slices into pieces.
  • Heat the coconut milk in a saucepan or pan. Let the shredded turkey simmer just below the boiling point.
  • Season to taste with salt and mango chutney and season with curry paste and curry powder depending on the desired heat and intensity. I had also added a little of a Thai spice mixture that I had on my spice rack. Easy, quick and tasty. Rice goes well with it. Enjoy your meal!
