Ingredients
- 500 g Turkey schnitzel
- 165 ml Unsweetened coconut milk
- 250 g Mango preserve drained
- 1 tsp Red Thai curry paste
- 2 tbsp Mango chutney
- 1 tbsp Curry powder
- Salt
Instructions
- Cut turkey fillets into bite-sized pieces. Divide the mango slices into pieces.
- Heat the coconut milk in a saucepan or pan. Let the shredded turkey simmer just below the boiling point.
- Season to taste with salt and mango chutney and season with curry paste and curry powder depending on the desired heat and intensity. I had also added a little of a Thai spice mixture that I had on my spice rack. Easy, quick and tasty. Rice goes well with it. Enjoy your meal!
