Turkey fricassee

Ingredients for 4 servings:

  • 3 turkey drumsticks
  • 1 ½ liters of water
  • 2 onions
  • 1 garlic clove(s)
  • 150 g carrot(s)
  • 100 g peas, frozen
  • 100 g broccoli
  • 100 g mushrooms
  • 150 g cream
  • 150 g milk
  • 2 tbsp, heaped cornstarch
  • ½ lemon(s)
  • 1 bunch of chives
  • e.g. curry powder
  • e.g. salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 1 hour 40 minutes

Peel and roughly chop one onion and garlic, and cook with the meat and water in a pressure cooker for 1 hour. In the meantime, prepare the other vegetables. Dice the carrots, thaw the peas, wash and finely chop the broccoli, brush the mushrooms and thinly slice them, and peel and dice the remaining onion. When the turkey stock is ready, separate the meat from the bones. Sauté the onions in oil, then add the remaining vegetables and sauté briefly. Pour in the turkey stock, vegetables, cream, and milk, add salt and pepper, and simmer until the vegetables are tender, about 15-20 minutes. Thicken with the cornstarch and season with curry powder, salt, pepper, and the juice of the squeezed lemon. Finally, chop the chives, add them, and serve.
