Brown the turkey and, a little later, the diced onion in a little fat until golden brown. Now add a little salt. Deglaze briefly 2-3 times with pineapple juice. Then immediately sauté with a little flour. Deglaze again with heavy cream and water and bring to a boil. Add the chopped chili pepper. Mix in the paprika, harissa, curry, chanterelles, and mushrooms, stirring constantly. Only now stir in the rest of the pineapple and the remaining juice. Depending on the consistency of the sauce, add more water and then stir in the ready-made mixture. Be careful, there is a risk of lumps. Stir frequently until everything has dissolved. Simmer for about 35 minutes. Serve with tagliatelle with parsley and rice.
